How to make kimchi

I came across this while browsing YouTube the other day:

Does anyone have any variants on this recipe? For example, I heard from one trusted source that some people grate pear or apple into the mixture.

Try Kie-jo Sarsfield’s kimchi recipe. I’ve tasted it. It’s great.
