On Thursday 10th September, Crispin in Spitalfields will present a ‘one night only’ guest chef takeover by Korean chef Suhyung Lee, currently senior sous chef at London’s Taiwanese hot spot BAO and Soho’s XU restaurants.
South Korean-born chef Lee will present a one-off six-course dinner menu for the evening, curated in collaboration with Crispin’s head chef, Naz Hassan. The menu is inspired by Lee’s home country – where he worked at the uber-cool Boksoondoga F1963 in Busan, South Korea; as well as his experience gained at some of the world’s best restaurants, including the revered Restaurant Andre (Singapore), L’Astrance (Paris), and the three Michelin-starred El Celler de Can Roca in Girona, Spain (voted the ‘best restaurant in the world’ three times by Restaurant magazine), ahead of him joining the team at BAO and XU in the capital.
Lee’s creative menus reinterpret classical French and European dishes, using seasonal produce and adding his own personal twist with traditional Korean-sourced ingredients, such as his self-proclaimed secret weapon – a potent, twenty-year fermented soy sauce. Lee’s menu for the Crispin takeover is still being developed, but guests can expect dishes akin to his ‘Black Cod Fritters’ and signature ‘Pork Katsu, kimchi, jjigae & Icheon rice’.
